✦ The verdict

Roastery-cafe done with conviction, not performance.

“Back to Black roasts its own beans on a Giesen W6 and pulls them through a Kees van der Westen Spirit, that's a serious commitment for a room this size. The Chef's Table Espresso, two sequential shots dialled to show different profiles, is the clearest argument for ordering at the bar. The apple pie is baked in their own Westpoort bakery. None of this is accidental.”

Back to Black is a quintessential Amsterdam specialty coffee pioneer, pairing its respected in-house roasting program with an exceptionally cozy, living-room atmosphere. While it has garnered international press, its identity remains deeply rooted as a beloved neighborhood landmark and national-tier roaster rather than a global pilgrimage site.

Back to Black

The Kees van der Westen Spirit on the counter tells you everything you need to know before the first shot lands. Back to Black doesn't hedge, this is a place that has thought carefully about every stage of the chain, from the Giesen W6 roaster in Amsterdam Westpoort where the beans are developed, to the two-group machine where they're expressed. Co-founders Inge Bulthuis and Noortje Vlutters opened in 2014, and Bulthuis was, for a period, the only woman roasting coffee in Amsterdam. That context matters: this wasn't a concept imported from somewhere else, it was built from the ground up with a specific point of view.

The current single-origin offering skews toward Colombia and Kenya, expect the kind of fruit-forward profiles that reward attention. The Chef's Table Espresso is the move if you want to understand what the roast programme is doing: two shots, two different coffees, served sequentially so you can actually compare them. It's a format that assumes you're paying attention, which is the right assumption to make here.

Filter options are serious: V60, Aeropress, Chemex, Cafetiere, Syphon. That's not a list assembled to fill a menu, it reflects a genuine commitment to brew method as a variable worth controlling. If you're visiting on a weekday with time to spare, a pour-over is the right call.

Binkie, the resident cat, may or may not be present. The baked goods, apple pie, vegan banana bread, cinnamon rolls, come out of their own bakery operation and are worth treating as more than an afterthought. The banana bread in particular has a following.

The crowd is a mix of locals who've been coming since the early days and tourists who've done their research. The energy is low-key and the music stays quiet enough that you can actually taste what's in your cup. It's a canalside corner in central Amsterdam that somehow doesn't feel like central Amsterdam, the pace is slower, the light is good, and nobody's rushing you.
