Toki brings Bonanza Coffee Roasters' Berlin roasts to a calm, minimalist Jordaan space built around the art of slowing down.

✦ The verdict
“Toki runs Bonanza Coffee Roasters out of Berlin through a La Marzocco Linea PB and a Kalita Wave programme that actually rotates. The Max Lamb terrazzo, the bamboo, the eyeless smiley on the wall, it all adds up to a room that makes you order a second coffee just to stay in it.”

There's a logo on the wall at Toki, an eyeless smiley, and a two-word mantra beneath it: go slow. It sets the tone before you've even ordered.
Opened in 2015 by Jeff Flink, who came to hospitality without a background in it, Toki has the feel of a place built by someone who thought hard about what they actually wanted from a coffee bar. The interior uses Max Lamb-designed terrazzo, natural wood, and bamboo to create something that reads as minimal without feeling cold. The multiple interconnected rooms give it a sense of depth, you move through the space rather than just occupying it.
The coffee programme runs on Bonanza Coffee Roasters out of Berlin, a roaster with a consistent focus on traceable, well-processed beans. The sourcing spans Ethiopia, Kenya, Rwanda, Tanzania, Brazil, and Indonesia, and the menu reflects that range, espresso-based drinks on the La Marzocco Linea PB alongside filter options brewed on the Kalita Wave, with the Mahlkönig Guatemala Lab handling the grind for those. Cold brew and drip round out the brew options. The iced latte is a regular recommendation from people who know the place well, and the matcha is worth ordering if that's your inclination.
Food is taken seriously here. The banana bread has its own reputation, the kind that travels by word of mouth and tends to hold up. The Toki Toast, made with watermelon radish and seasoned with Nagami Togarashi, signals that the kitchen is doing something more considered than the average café plate. Breakfast and lunch run daily, with vegetarian and vegan options throughout.
The crowd skews local and freelancer-heavy, people who have made Toki a habit rather than a destination. The pace of the place encourages it. Conversation doesn't feel rushed, laptops don't feel out of place, and the baristas operate with the kind of quiet efficiency that keeps things moving without disrupting the atmosphere.
One practical note: Toki is cashless, and they sell their own spoons, apparently a response to how often they go missing. Both details say something about the place.
