Nous – Coffee Store brings espresso, batch brew, and slow coffee to a light-filled corner on Amsterdam's Haarlemmerplein.

✦ The verdict
“Nous runs espresso, batch brew, and slow coffee out of a compact lilac-and-white space that opened in 2023 and already has a second location in Amsterdam-North. The Nous Lemonade, colour-shifting, ginger-spiked, sounds like a gimmick until you try it. The flat white holds its own alongside it.”

Nous – Coffee Store
The white and lilac interior is the first thing you notice, spare enough to feel considered, warm enough that you don't feel like you've walked into a mood board. Nous opened in 2023 and has already developed the kind of loyal morning crowd that fills a small café fast, so if you're planning to sit, earlier is smarter.
The coffee programme covers espresso, batch brew, and slow coffee, which gives you options depending on how much time you have and how much attention you want to pay. The flat white is the reliable order, well-textured, properly balanced, but the slow coffee is where Nous signals its intentions most clearly. It's an unhurried approach in a neighbourhood that moves quickly, and it suits the space.
Matcha is on the menu and done properly, not as an afterthought. The Iced Barista Cacao with Coconut Milk is worth ordering once, especially if you're visiting in warmer months, it's playful without being cloying. The Nous Lemonade, a colour-changing drink built around ginger, purple tea, and red fruit variations, has become something of a signature, and it earns its place on the menu even in a room full of coffee people.
Food runs to pastries and light bites, cinnamon buns, vegan banana bread, the kind of offering that complements rather than competes with the drinks. Vegan options are genuinely represented, not just tolerated.
Louis Tomasoa and Koen van Meersbergen own the place, and the baristas carry the same energy, present, conversational, not performatively so. The 4.8 rating across nearly 200 reviews reflects something real: consistency and a room that makes people want to come back. A second location opened in Amsterdam-North in March 2025, which suggests the format is working.
Nous isn't trying to be the most technically rigorous coffee bar in the city. What it does is execute a focused menu with care, in a space that people genuinely enjoy spending time in, and on Haarlemmerplein, that's exactly the right call.
