✦ The verdict

A weekend-only bar that justifies the detour

“Most cafés in this postcode are running on tourist footfall and autopilot. Kuub, founded by Dean with a decade behind the bar at places like Man Met Bril Koffie, pulls from a tight roster of Rotterdam micro-roasters including Shokunin and Schot on a La Marzocco Linea Mini R. The filter menu has range, the extractions are clean, and the ceremonial matcha is treated with the same seriousness as the espresso.”

Under the cubes, above the noise

Rotterdam has no shortage of places to grab a coffee near its landmarks. Kuub is not one of those places. Founded in late 2023 by Dean, whose CV includes stints at Man Met Bril Koffie and Giraffe Coffee Roasters, it operates with a focus that most weekend-only venues don't bother with: a rotating cast of Rotterdam micro-roasters, a filter menu that actually changes, and a La Marzocco Linea Mini R that's clearly being looked after.

The roaster lineup reads like a local procurement map. Shokunin, Schot Coffee Roasters, Manhattan Coffee Roasters, and Grounded Craft Coffee all appear on the menu at various points. On a recent visit, Schot was on espresso and Shokunin was handling the filter, which meant two very different flavour directions available within a few square metres. Dean or whoever is on bar will talk you through the options without making it a lecture.

The space is compact and industrial in the way that the Cube Houses themselves are: angular, deliberate, a little surprising once you're inside. It draws a mixed crowd of locals who've made it a weekend ritual and tourists who stumble in from the Markthal and end up staying longer than planned. The locals are easy to spot. They don't look at the menu.

The filter programme is the main event, but the espresso holds up. Single-origin offerings rotate alongside the house option, and the milk work is controlled rather than showy. The ceremonial-grade matcha latte is worth ordering if you're inclined: it's prepared properly, not as an afterthought for the non-coffee drinker.

Pastries come from local suppliers and the light lunch options are limited but decent. Vegan options are available. Don't come expecting a full kitchen.

Kuub runs barista training sessions, which tells you something about how Dean positions the place. This isn't a café that happens to have good coffee. It's a coffee operation that happens to have chairs. The architecture above it gets the tourists in the door. The programme is what brings people back.
