✦ The verdict
“Stach doesn't pretend to be a specialty coffee destination, and that honesty is refreshing. The cappuccino is reliably made, the matcha menu is broader than you'd expect, and the real draw is the counter of fresh sandwiches and baked goods that disappears fast on weekday mornings. Go before 9am or accept the lunch crowd.”

Stach is not trying to be a coffee bar. That clarity of purpose is, oddly, part of what makes the Overtoom location work.
Walk in on a weekday morning and the counter is doing two things at once: someone is pulling an espresso while someone else is wrapping a sandwich. The rhythm is fast and practised. This is a place built around the idea that good coffee and good food belong in the same transaction, and it executes that idea with the kind of consistency that comes from running the same play since 2011.
The coffee programme is espresso-only and modest in scope, cappuccinos, flat whites, the usual, with dairy and plant-based milk both available. No roaster is named on the menu or the wall, which will frustrate anyone who wants to trace provenance. What you get instead is a well-made drink that doesn't embarrass itself: the milk texturing is controlled, the extraction isn't sour or burnt, and the whole thing arrives quickly. For a deli operating at this pace, that's not nothing.
The food is where Stach has always invested its identity. The banana bread is worth the stop on its own. Salads are made fresh, sandwiches are assembled to order, and the range skews heavily toward vegan and vegetarian options without making a performance of it. There's also a matcha menu, which sits alongside the espresso drinks without much fanfare, a practical nod to how Amsterdam's drinking habits have shifted.
Oud West is a neighbourhood of morning commuters and afternoon errand-runners, and Stach reads that crowd accurately. The energy on a Tuesday at 8am is purposeful rather than lingering, people know what they want, the staff know how to move, and the queue clears. If you're looking for somewhere to open a laptop and settle in for three hours, this isn't it. If you want a proper cappuccino and something genuinely good to eat before you get on with your day, it earns its place on the route.
