“Most roasteries grow out of their first space. Lot Sixty One never did, and that restraint is part of the point. The EK43 runs hard, the La Marzocco Linea Mini is dialled tight, and the beans crossing Ethiopia, Guatemala, Brazil, and Indonesia are roasted metres from where you drink them. You can smell the roaster from the street before you even decide to stop.”
