✦ The verdict
“Morning Owl runs through DAK, Friedhats, Uncommon, Rum Baba, and Sprout, sometimes more than one on the bar at once. Casey Kooyman makes the horchata and the orgeat himself, and it shows. Four square feet of counter space, no compromise on the programme.”

Morning Owl
There's no door to push open, no table to claim. Morning Owl is a window, literally, and once you understand that, everything else makes sense. Casey Kooyman has built something deliberately compact: a rotating cast of Amsterdam roasters, a Decent Espresso machine, and a syrup programme that has no business being this good in a spot this small.
The roaster lineup changes, but you'll regularly find DAK, Friedhats, Uncommon, Rum Baba, and Sprout on the board. That's not a hedge, it's a point of view. Rather than committing to a house roaster, Kooyman has turned the menu into a live snapshot of what Amsterdam's specialty scene is producing right now. The filter option is worth asking about before you default to espresso.
The Decent Espresso machine is an interesting choice, pressure-profiling hardware more common in home setups than commercial counters, and a signal that extraction here is taken seriously rather than automated. It also pulls the matcha, which gets the same level of attention as the coffee. If you're sceptical of matcha in a coffee bar, this is a reasonable place to revise that position.
The signature drinks are where Kooyman's background comes through most clearly. The Toasted Almond Orgeat Flat White uses a syrup he makes himself, not a flavour shot, an actual orgeat, and the result is nutty and round without tipping into sweetness. The Horchata Latte is built on homemade horchata using condensed coconut and fresh cashew milk, which also happens to be the house dairy-free option. It's a more interesting solution than oat milk.
Food runs to homemade pastries, bread pudding, and Polvorones, Mexican-inspired shortbread cookies that make sense once you know Kooyman spent years in LA before bringing this to Amsterdam. None of it feels like an afterthought.
The crowd skews local and returning. People know what they're getting and come back for it specifically. The queue moves, the handoffs are clean, and Kooyman, with two decades behind him, from New York to Los Angeles to here, talks about coffee the way someone does when they've already proved the point and no longer need to.
Come with somewhere to be afterwards. This is coffee you take with you.
