✦ The verdict
“Hopper was doing this before third wave was a phrase anyone used in Rotterdam. The Kees van der Westen Mirage pulls a flat white with real stone fruit character, but the sourdough from the deck oven is what actually fills the room. Order the filter tasting and taste the same Ethiopian lot shift as it cools.”

Half of Rotterdam's specialty coffee scene can trace its family tree back to Hopper. Opened in 2010 by Karel Rietveld and Patricia Schildkamp, this was one of the first places in the city to take single-origin coffee seriously, and it still operates like it has something to prove, even after the 2012 Misset Horeca award confirming what regulars already knew.
Walk in mid-morning and the first thing that hits you is the bread. The deck oven runs all day, and the sourdough loaves come out on a schedule the baristas seem to know by heart. Order the classic toastie with the house ketchup and you'll understand why people build their errands around this corner of Schiedamse Vest.
The coffee program earns its own attention. Beans are roasted at Hopper's own facility in north Rotterdam, with rotating single origins from Ethiopia, Rwanda, El Salvador, Kenya and Brazil moving through the AeroPress, Chemex, French Press and V60 stations behind the counter. The signature move is the filter tasting: a pour-over served alongside a small glass of the same coffee cooled down, so you can track how the fruit notes shift as the temperature drops. It's a small gesture, but it tells you the baristas care about what happens in the cup after it leaves the machine.
On espresso, the Kees van der Westen Mirage Triplette turns out a flat white with real caramel sweetness and a stone fruit edge that holds up against the milk. It's not trying to be a dark, syrupy Italian-style shot, and if that's what you're after, look elsewhere.
The room itself does a lot of work too. Tall ceilings, concrete floors, and wooden tables and counters that Rietveld built by hand give the space an industrial warmth that never tips into cold. It fills with students, local creatives and laptop workers who colonise the communal table and the mezzanine upstairs, and by lunch the noise level climbs from low hum to genuine buzz. Come at 10am if you want the sourdough fresh from the oven and a seat without a fight.
