✦ The verdict
“Zahir Omar roasts light and slow, chasing the fruit and floral notes most Rotterdam roasters roast past. The central island puts you elbow to elbow with the person who dialled in your V60, and the Kenya or Burundi lot on brew changes with the season. This is a place built for questions, not laptops.”
— The DFC Editors
Walk past the ceiling rose the renovation crew uncovered and left exposed, and you land at a coffee island with no counter wall separating you from the person roasting your coffee. That's the whole design premise here. Zahir Omar started this as a home roasting experiment in 2018, sample roaster vented out a kitchen window, and it's grown into a proper micro-roastery with a tasting room built around conversation rather than throughput.
The coffee program is narrow by design: single-origin only, roasted lighter than most Rotterdam spots to preserve the fruit and floral character of lots from Kenya, Burundi, Uganda, Colombia, Brazil, and Costa Rica. Order the V60 and you'll get whichever microlot is currently on brew, poured by hand, often with a quick rundown of processing method if you ask. The espresso runs the same estate beans through a double shot, rotating regularly enough that regulars track origins the way others track vintages.
Food plays a supporting role. Pastries come from neighborhood bakers, served in ceramics made by local Rotterdam artisans, which fits the general ethos: everything sourced close, everything traceable. There's no hot brunch menu and no pretense of one. If you want a cannelé with your pour-over, that's the extent of the ambition, and it works.
This is not a laptop cafe. There are no power points, and the layout, built around that open tasting counter, isn't set up for parking yourself for four hours of work. What it's set up for is a slower kind of visit: standing or sitting near the roaster, asking about the difference between a washed Kenya and a natural Burundi, watching the pour technique change slightly for each. Morning and early afternoon are the calmer windows if you want that conversation without a queue behind you.
Grounded also supplies roast profiles to other Rotterdam venues, including their sister cafe Booon nearby, so the beans you're drinking here likely show up elsewhere in the city under different labels. Buying beans to take home is encouraged, and the shop runs a returnable container system for anyone who wants to skip the packaging. It's a small, specific operation that knows exactly what it's for, and doesn't try to be anything else.

Insider note
Founder Zahir Omar started roasting coffee in his apartment kitchen with a sample roaster in 2018, routing exhaust ducting out the window before eventually scaling up to a professional production machine.
