✦ The verdict
“Ahmed Mahla spent seven years roasting wholesale before setting his own sourcing bar at 86 points and above, and that threshold shows in the cup. The EK43 and Mythos grinders feed a V60 program built around Ethiopian and Panamanian lots with real floral lift, while the Eagle One keeps espresso clean enough for the Nasnas to make sense as a menu item. This is a room for tasting, not typing.”

Walk into Spicekix and the first thing you notice is what's missing: no dark roast smell, no laptop screens glowing across every table. Ahmed Mahla built this place after seven years roasting wholesale for other people's menus, and it shows in how deliberately everything here points back to the bean. The Scandi-Japandi interior, all pale wood and clean lines, keeps the focus where he wants it: on the coffee.
The roasting philosophy is uncompromising. Everything on the board scores 86 points or above on the SCA scale, and the profiles sit at the ultra-light end, chasing acidity and florality rather than caramelised sweetness. A Colombian or Panamanian single origin through the V60 shows this best, bright and structured, brewed with the kind of attention that only comes from someone who used to roast for a living. Check the retail shelves too. Nano-lots and experimental Gesha roasts sometimes sit there without ever making the main menu.
The Victoria Arduino Eagle One and dual grinder setup, an EK43 alongside a Mythos, aren't just for show. Espresso extraction is precise enough to carry the house's more inventive drinks: the Nasnas leans into Moroccan spice against silky steamed milk, the Korean Einspanner stacks dense cold cream over chilled espresso, and the Tiramisu Latte pulls in house mascarpone for something closer to dessert than coffee. Ceremonial matcha gets the same seriousness, with a Matcha Tiramisu Latte that treats the powder as a specialty ingredient rather than an afterthought.
Laptops are tolerated but corralled to a dedicated section, a house rule meant to protect the tasting-room atmosphere rather than a customer-service failure. It works. Conversations carry, the room stays quiet, and the crowd skews toward people who came specifically for the coffee rather than a plug socket. Outdoor seating on Vlietlaan gives you a lower-key alternative if the lab-like focus inside feels like too much commitment for a Tuesday morning.
This isn't a place for a straightforward flat white and a quick exit. It's a place to sit with a pour-over, read the tasting notes, and understand why the founder chose lab as the operative word in the name.
